Danielle’s Cookbook: Chickpea Salad

Hey everyone I hope you had a great weekend! Mine was super busy but I got to thinking about food and decided that since I shared a not so healthy recipe with you guys last time, I would share a healthy recipe with you. I love healthy food and am always experimenting with new recipes, but this has remained one of my favourites. Enjoy!


1 cup Chickpeas

1 mini cucumber or half 1 cucumber

6 cherry tomatoes

4 mini peppers

1 half small red onion

2 tsp balsamic vinaigrette


-Take a can of chickpeas and measure out one cup. Rinse out the chickpeas unless you like the taste of that liquid.

-Wash 1 mini cucumber or a half of a regular sized cucumber. Cut into small pieces then dice into smaller pieces.

-Wash 6 cherry tomatoes or more if you want more. Cut into halves and then into quarters.

-Wash 4 mini peppers, the colour doesn’t matter. Cut into small pieces then dice into smaller pieces.

-Wash, peel and cut half of a mini red onion. You don’t want too much or the taste will be overpowering. Cut into small pieces then dice into smaller pieces.

-Combine ingredients into a bowl and mix.

-Lastly add 2 teaspoons of balsamic vinaigrette or another dressing of your choice. I chose this one because it is simple and not too sharp so as not to take away from the flavour of the vegetables.

-Mix in the dressing



This is one of my favourite things to have for lunch and can be perfect for so many different occasions. You can have it on its own for either lunch or dinner. You can have it on the side with a sandwich or some sort of protein. Or you can make it as a side dish for a BBQ. It is incredibly healthy and really delicious.

I added some vegetables that I think best complement the chickpeas, but feel free to add or omit whatever you want. Some things that also might be good are dried cranberries, pecans, feta cheese or even some other type of dressing. Or if you don’t like chickpeas you can make the exact same thing with quinoa and it’ll taste just as delicious.
